Brown Bagging It

I try to bring my lunch to work most days to save some cash...otherwise the money I spend to fill my growling tummy at noon adds up quickly to a monthly car payment. Packing a sandwich every day gets kinda boring...so this is a super cheap, healthy, quick and filling alternative. This is an "eyeball" recipe. No need to be exact and you can add as much or as little as you want. I call this Black Bean Surprise. This makes about 4 servings.
  • 2 chicken breasts
  • 1 can black beans
  • 1-2 cups frozen corn
  • 1 12 oz jar of salsa
  • tortilla chips
  • garlic salt and pepper to taste
  • grated cheese (optional)
  • avocado (optional)
  • sour cream (optional)
  • jalapeno slices (optional)
  1. Add chicken breast to boiling water, boil about 15 minutes (or until juices run clear)
  2. In a large greased pan add can of black beans and corn over low to medium heat. Add garlic salt and pepper to taste
  3. Let chicken cook and shred with a fork--add shredded chicken to corn and black beans
  4. Pour salsa over mixture and mix well.
  5. Add optional ingredients and scoop with tortilla chips
